Single Serve Chocolate Cake

 

Sometimes you don’t want to wait for a whole batch of Chocolate Cupcakes to bake….sometimes you need chocolate cake in under 2 minutes! 

Your solution!! Single Serve Chocolate Cake and as always – it is Egg free! 

This is a variation of Sheri Grahams FP Chocolate Cake recipe. You will need to click through to find her original and I will give you my variations to make it egg free and still delicious!

I am calling this an S….only because I did use a chia egg in it, I am more of a fuels kind of THM’er rather than a numbers kind. So, since this has S fuel in it, I am saying S. But my hunch is it is pretty close to FP. Either way, it’s delicious and satisfying! 

For the recipe, I start by adding all the dry ingredients in to my Pyrex 2 cup storage container (which can be used in the microwave). Mine looks like this and works perfectly for this cake as well as MIM’s. 

Use her measurements for the oat fiber, coconut flour and the cocoa powder and salt.

I add in 1 Tablespoon of protein powder. I use Nutribiotics brown rice, but whatever you prefer should work just fine. 

For the baking powder I add in 3/4 teaspoon PLUS 1/2 teaspoon of baking soda. (we need extra lift!)

I cut back the gluccie to 1/4 teaspoon. 

I use 1 Tablespoon Super Sweet Blend (if you like it sweeter add another 1/2T or so)

In place of the egg white, I make one chia egg which is 1 Tablespoon Chia Seed plus 3 Tablespoon hot water, allow to sit until gelled. 

I also use 4 Tablespoons of water and a 1/2 teaspoon of Apple Cider Vinegar. 

After you have combined all the dry ingredients, pour in your chia egg, add your ACV to your water, now combing that in with the rest of your ingredients. 

Combine well! I sometimes throw in a sprinkle of Lily’s Chocolate Chips at this point, but it is not necessary. 

Microwave for 1 minute 45 seconds. A little longer than the original recipe, I found it was still a bit wet in the middle at a minute thirty. 

This cake holds together beautifully, rises nice too! I serve mine with strawberries, if you can have dairy a little whipped cream on top would be perfection!
