For this week, I would like to share a popular recipe that my family enjoys, Enchilasagna with an additional recipe of Spanish cauli rice! (click on the photo below to be taken directly to this delicious recipe!)
I do add cheese to this recipe, you can sub it for a lovely cashew cheese sauce, it would be fabulous!
Since this is my launch for “Tina’s Taco Tuesday Celebration!” I want to also add a fabulous children’s book I recently stumbled upon on my recent trip to Oregon! The little boy I was visiting with was very shy. I asked him if he liked books, thankfully he did! I asked him if I could see his favorite books and I was just laughingly stunned to see the title!

Hello! I am sorry for any confusion, this is a stock photo and those are corn tortillas. You can use 2 regular corn in an E or crossover setting or 4 sprouted. 🙂
