Truth – I ate more than one serving of this when I made it. I stopped at two, but I wanted more lol. It is REALLY good. Not only is it really good…it is really easy and it takes no special ingredients except sweetener! I used THM Super Sweet Blend, however you could use Pyure, you may even be able to get away with just stevia since it has the fruit in it!
I have been slacking in the prep department lately. When I slack in prepping I tend to not do as well on THM. Why am I slacking? Because I have grown bored of my usual make ahead, go to foods. I make BAM cake or this amazing oatmeal back often…but I needed a change. Then I remembered I had frozen peaches! AHA!! Oh peach and oatmeal…why yes, sounds lovely! A little cinnamon….yum!
I threw this together recently and it came out great! I am so glad to share this with you1 I used Jennifer Griffins of A Home with Purpose baked oatmeal recipe. She made it super simple and allergy friendly. No subbing needed! LOVE THAT!

Peach Baked Oatmeal
*In a 9×9 baking dish place a layer of frozen (or fresh) peaches on the bottom of the dish in a single layer.
*Combine 1.5 Tablespoons Super Sweet Blend, 1/2 tsp cinnamon and 1 Tablespoon coconut flour, sprinkle over the peaches.
*Make up one batch of A Home with Purpose Baked Oatmeal as written, I added a full teaspoon of cinnamon and 2 scoops collagen to increase the protein content.
*Pour over the peaches.
*Bake as directed, however much longer. Because of the frozen peaches I cooked mine for 45 minutes until it was done.

This was soooo good and I even forgot the baking powder. I used no sugar at all and used a small spring form pan. I put a little bit of unsweetened coconut flakes on top also
So pretty and good.
