I love strawberry shortcake….especially with a little whipped cream on top. Truly a favorite. It is something my mom made for me when I was a child, so I suppose it’s a bit of a nostalgic food for me.
I have been trying to switch my fuel types up in a new way, I used to start my day with E and end with S. I have been reading lately that eating a few carbs in the evening might be a better option for many with blood sugar issues. It can also help with weight loss if you are stalled. I am not sure this idea works, but I figured I would give it a try. I do have to say, I am really enjoying having an E later in the day.
Dessert can be difficult, especially without egg. It occurred to me that my Oatmeal Scone Recipe
might make a delicious base for strawberry shortcake! IT IS FANTASTIC!! I warmed some frozen strawberries, added a few drops of liquid vanilla stevia, although a doonk of stevia leaf would work. Smashed them up with my potato masher. I allowed them to cool a bit before topping my scones, I didn’t want my whipped cream to melt right off. Then a small dollop of whipped cream, or coconut cream if you are trying to make it dairy free.
I found this fun gadget on Amazon to try with coconut milk to make whipped cream quickly and anytime!! Do any of you have it? Does it work well with coconut milk? I’ve been told any milk should work….wouldn’t it be fun??
I truly hope you find this as bowl licking good as I did. Seriously, I licked the bowl.
