I use a lot of oat flour for my E baked goods – and while I love it and it works so well, I have seen so many requests for grain free baking….ladies were having success with garbanzo bean flour, so I jumped on the bandwagon and came up with this brownie recipe and it is SO GOOD! (If i do say so myself lol)
I originally started with a single serve muffin….but that just wasn’t enough haha!! I wanted more brownies!! I wanted to bake once and eat brownies for a few days!!

One thing I love about garbanzo bean flour is that in just 1/4 cup it has 6 grams of protein! Of course I am also just so happy to bring a totally grain free option to the allergy ladies on plan.
I used a specialty ingredient in this batch, swerve brown sugar sweetener. It’s technically a personal choice, so go ahead and use whatever your favorite sweetener is!

When I made this batch of brownies (a couple of times..ya know for research haha) my whole family gave them a big thumbs up! So I knew it was ready and time to share with all of you!

Let’s get to the recipe!
Grain Free Vegan Brownies!
Serves 4 (or 3… lol)
Ingredients:
1/2 cup garbanzo bean flour
1/4 cup Swerve Brown Sugar (or use 1/8 cup SSB)
1T Super Sweet Blend
1/2 cup Cocoa powder
1 teaspoon baking powder
Pinch of salt
1 Tablespoon melted coconut oil
1/2 cup water
1 teaspoon vanilla
1 single serve container apple sauce (1/2 cup)
Instructions:
Preheat oven to 350
Combine dry ingredients, mix well. Melt coconut oil, combine with water, vanilla and applesauce. Add wet to dry and mix well. Since there is no real added fat here, you could squeeze in a FEW chocolate chips….but just a few! 🙂
Pour into an 8×8 baking pan, sprayed or lined. Bake for 12-15 minutes.

Have you tried to make an egg free, dairy free, and gluten free pancake with this garbanzo bean flour? I need alternatives for breakfast and am so limited in what I can have. I also want to incorporate more E meals. Maybe this flour will help with that. Thank you for posting! I’m excited to try these.
