One night I was just craving a little something sweet. I wanted cake….or a cookie…some chocolate….something to satisfy my sweet tooth and I wanted it done quickly! 

This is what I came up with! It has the drier texture of a cookie, but is thicker and a bit fluffy like a cake! COOKIE CAKE! It is very satisfying! Of course, as always, allergy friendly! This is egg, nut, dairy and gluten free!

The oats in this delicious little treat are about 15 grams…..which kind of leaves us in no-man’s land….make 2 lol. 
I wouldn’t call this a fuel pull…I just like to say it’s an E since I am using an E fuel in it. I also did use Lily’s Chocolate chips, just a little and I am counting that toward my allowed fat. You could pair this with a piece of fruit…or seriously, make two. 🙂

                                                                                       

I have also found a few carbs at night work well for me before bed. I have adrenal fatigue, I find with that a few extra carbs really do help me sleep better. So if  it has been 3 hours since your last meal, or you had a fuel pull, this dessert would be great! You can also enjoy this for breakfast or a snack if you’d like!

This is such a quick and easy recipe! The only special ingredients you really need are the chocolate chips, although chunking up a bit of 85% dark chocolate bar would work too and sweetener! My number one favorite is by far THM Sweet Blend!

Chocolate chip Cookie Cake

1/4 cup oat flour
1 Tablespoon Super Sweet Blend
1 Tablespoon Coconut Flour
1 teaspoon baking powder
1 Tablespoon Dark Chocolate chunks or Lily’s chocolate chips
1/4 cup on plan milk or water

Combine dry ingredients in microwavable single serve dish such as I have linked in my post. Add in chocolate and stir well. Pour in milk or water and combine until mixed. Microwave 1 minute 30 seconds, or until done.
Leave in container, place on trivet to cool. Enjoy!
