I was so excited to get working on a gluten, dairy, egg (it’s actually vegan), nut and seed free pancake! I do have my oat flour pancakes which many enjoy, but I had many requests for oat free, so I decided to create something yummy that my grain free friends could enjoy too! (Or if you just want a change!!)

This recipe really did come together quite easily, the only special ingredient is the sweetener – which if you cannot have sweetener I think you could enjoy these without as well and they will still be yummy! Just make a yummy berry sauce to pour on top, that should be plenty of sweet! Well, I guess the garbanzo bean flour could be considered special…but I can find it at most grocery stores….

I decided to make some chocolate chip, blueberry and plain ones on my second test of the recipe! All are super yummy!

The amazing thing about garbanzo bean flour is 1/2 cup contains 14 grams of protein and 20 net grams of carbs!!! This is a power E breakfast and it is totally vegan! You mostly meatless ladies might really enjoy this one!! If you wanted to bump up that protein pair this with half a frappa with vegan protein powder and you are knocking it out of the park with protein to start your morning!

Garbanzo Bean Pancakes by Oil of Joy

Course Breakfast
Cuisine dairy free, E meals, egg free, gluten free, grain free

Ingredients
  

  • 1 cup Garbanzo bean flour
  • Pinch of salt
  • 3 teaspoons baking powder
  • 2 teaspoons Super Sweet Blend
  • 1/2 teaspoon cinnamon
  • 1/2 cup water - may need to add up to an extra 3 Tablespoons if too thick
  • 1 teaspoon vanilla

Instructions
 

  • Mix dry ingredients, then combine were ingredients, pour wet into dry and combine well. It won't' be runny, rather thick but if you feel its too thick add a bit more water.

Notes

NOTE - the chocolate chips could be your added fat, or could make these a crossover. A yummy in my tummy chocolately goodness crossover lol.
